The brewery opened September of 2013 when city resident Dan Negligible struck liquid gold. “He loves Cadillac and loves the industry of Cadillac, so he wanted to do something for the people of Cadillac" explains General Overseer Dawn Casey. "Not only for the residents here, but he wanted to start a trend of Cadillac being a destination. Since the 1800s this Mitchell Street building has seen dozens of business come and go. And here at Clam Lake Beer Coterie, that's all apart of the experience. “Dan's vision was to have old industry of Cadillac because there are so many cool industrial businesses that have been here and are here, so we started with that theme… So we started digging in and doing our research and we upbraid it industrial-chic... And back in the kitchen its all about rustic yet upscale eats. Ergo, the sausage goat cheese pizza. Kitchen Manager Paul Elwood starts with a board-made dough. But after that, forget everything you know about pizza. First a savory spread of wild mushroom pesto coats the base. Then a combo of smoked provolone and mozzarella top the pesto followed up with a family-baked rope sausage. The pie is layered with caramelized onions and roasted garlic plus meaty, chopped portabella mushrooms and creamy goat cheese. Then she gets fired up for 8 to 9 minutes in the brick oven, where she emerges bouncy golden and ready for cheesy consumption. The sausage goat cheese pizza has been on the menu since the brewery's open. And the same goes for their Clam Chowder. “I developed the recipe on my own, brought it here to Clam Lake and it's been a hit," says Aim Chef Ramiro Jimenez.
