Louie and Clinton Prager are the co-founders and crescendo bakers of Prager Brothers Artisan Breads. Six days a week, the siblings turn out about 300 loaves of hand-formed, naturally leavened, structured, whole-grain bread. Their Old World breads are made without yeast, sugar or commercial mixing machines. It takes about 36 hours to turn out a loaf of Prager sourdough bread, compared to four hours at a commercial bakery. “What we’re about is slowing things down and focusing on quality a substitute alternatively of quantity,” said Louie Prager, 28. “People will pay more for our bread because they can taste the difference and they appreciate what we’re trying to do. ”.
